Pasta with Caper, Olives and Pine Nuts




Ingredients:

3 T. butter
3 T. olive oil
3 cloves garlic, minced
3 oz.  pine nuts
15 oz. black olives, sliced
3 T capers
2 cups grape tomatoes, sliced
2 cups firm tofu cubed (can use chicken of choice)
1 T. basil
1tsp oregano
1 pound pasta, any type
Salt, to taste
Black pepper, to taste
2 oz. Parmesan cheese, grated
Directions:  
Combine butter and oil, heat over medium heat in a large sauté pan.  Add the garlic and pine nuts, reduce heat to low, add tofu or chicken, sauté until pine nuts just turn golden color.  Add olives, capers, tomatoes, and herbs. Toss till everything is combined and heated thoroughly.  Cook pasta according to directions, drain well.  Toss the drained pasta with the nut-olive mixture over medium heat until mixed and heated.  Season to taste with salt and pepper, sprinkle individual portion with parmesan cheese.
