Sweet Potato Salad

4 boiled Sweet Potatoes (skin on) diced

3-4 stalks Celery diced

1/2 - 1 Vidalia Onion diced

1 cup fresh Green Peas raw or blanched (or frozen)

Mayonnaise to taste (use Organic Olive Oil based, or Soynnaise or Canola based Mayo

1 Tablespoon Spicy Dijon Mustard (Annie’s Organic Horseradish suggested)

Fold ingredients together in a container and keep covered and chilled.
