One Pan Poached Fish/Veggie Wonders

In a frying pan combine:
olive oil (enough to coat bottom)
chopped veggies of your choice:
eggplant
green and yellow squash
onion
garlic
asparagus
broccli
all colors of peppers (yellow, red, green,orange)
Cook on medium just until veggies are a bit softened (not mushy) add in some white wine (about a cup or so) throw on your favorite fish (salmon, cod, haddock) cover with a lid for about 5 in and voila, dinner is served and only one pan to clean.
